I worked for many years at a culinary university in Puerto Rico and people came up to me and asked if there was a short class that they could take to learn the basics and no there was not. My mom got sick and it was hard to go work as a chef, too many hours and she needed me at home. And the idea of no cooking or teaching for a while drove me crazy.
